Since I’m eating for three these days, I try to keep healthy snacks on hand. Filled with oats, dried cherries and dark chocolate chips, these decadent cookies are a sweet ending to any meal. I can nearly eat the entire batch by myself, so it’s a great thing that they’re good for you!
Heart-Healthy Cherry Chocolate Chip Cookies
1/3 cup all-purpose flour
1/3 cup whole-wheat flour
1-1/2 cup old-fashioned rolled oats
1 tsp baking soda
1/2 tsp Kosher salt
6 Tbsp unsalted butter, at room temperature
3/4 cup light brown sugar, packed
1 tsp pure vanilla extract
1 large egg, lightly beaten
1 cup dried cherries
1 cup dark chocolate chips
Preheat oven to 350 degrees F. Whisk together the flours and oats, baking soda, and salt in a large bowl; set aside.
Melt butter in a small saucepan over low heat. Remove from heat and add brown sugar, stirring until smooth. Add sugar mixture to flour mixture, then beat with a mixer at medium speed until well blended. Add vanilla and egg, beating until combined. Fold in cherries and chocolate.
Drop dough by tablespoonfuls 2 inches apart onto baking sheets lined with parchment paper. Bake for 12 minutes or until set. Cool on pans 3 minutes, then remove cookies to wire racks to cool completely.
